BAKED
FISH
Serves 4
depending on size of fish.
Ingredients
1 large fish, scaled,
cleaned and gutted.
½ cup prawns (chopped)
2 cups breadcrumbs
2 dessertspoons parsley
(chopped)
120 grams butter
Juice of 1 lemon
1 cup grated cheese
1 cup white wine
salt & pepper
Method
Rinse
fish in lemon juice and water and dry.
To
make stuffing, mix half of the chopped parsley, 1 cup breadcrumbs, the chopped prawns, a few drops of lemon juice, salt and
pepper.
Stuff
the fish with the stuffing mixture and secure with skewers. Place in an oven
proof dish.
Pour
wine over the top and season with salt and pepper. Add dabs of butter and
cover.
Cook
in a moderate oven until almost tender.
Remove
from oven and drain off juice.
Mix cheese with remainder of the breadcrumbs, parsley
and lemon juice.
Baste
fish well with melted butter and cover with the cheese and breadcrumb mixture.
Cook
in a moderate oven until golden brown.
