ENZO’S FISH SOUP

 

This recipe was donated by Enzo Trappani from Brisbane who tells us it is his Mum’s recipe all the way from Sicily.

 

Ingredients  

1 reef fish (approx 2kg)

1 onion *

4 cloves of Garlic *

3 peeled tomatoes *

2 stalks of celery *

1 dozen almonds *

½ cup olive oil

3 dessert spoons of salt

pepper to taste

1 tub (140grms) tomato paste

500 grams Risoni (soup pasta)

 

Method

Place all * ingredients in vitamiser until finely crushed.

Transfer to large saucepan, add oil, salt, pepper and tomato paste.

Cook for 15 minutes stirring every now and then.

Add enough water to fill the saucepan halfway.

Bring to boil and add fish.

Cook by boiling until the fish is cooked (approx 10 to 15 minutes).

Remove fish and strain the soup.

Put the soup back into saucepan, bring to boil. .

Add 500 grams Risoni (soup pasta)

Keep stirring to prevent pasta from sticking to bottom of saucepan.

Soup is ready when pasta is cooked.
