FISH PIE
Ingredients
750 grams potatoes
30 gram butter or margarine
1 ½ cups milk
500 gram fish fillets (use
fish that flakes easily, Flake Mackerel etc)
2 Hard boiled eggs chopped
¼ cup fresh parsley
60 gram Tasty cheese
1 Tbls
cornflour
1 Tbls water
Pepper and Salt to taste
Method
Boil
potatoes until soft and then mash with butter and ¼ cup of milk
Poach
fish in pan with remaining milk for 4 mins.
Remove
from milk and remove any skin. Flake fish and replace in milk Stir in corn
flour and water and cook until sauce boils and thickens.
Remove
from heat and allow to cool. Stir in the Eggs and
parsley.
Preheat
the oven to 200 deg C. Coat a medium
baking dish with cooking spray.
Place
fish mixture in dish cover with mashed potatoes and sprinkle cheese on top of potatoes Bake for 25 mins or until top is golden brown
