MOROCCAN
MACKEREL
Sufficient for around 4
medium sized mackerel about 350grams in weight cleaned & gutted.
Ingredients for Dressing
2 shallots (very finely
chopped)
2 plump garlic cloves
(crushed)
1 fresh red chilli (chopped & deseeded)
6 tablespoons virgin olive
oil
Juice of 1 Lemon
4 tablespoons fresh
coriander (chopped)
Method for Dressing
This
dressing is not cooked but should be very finely chopped so that the flavour will penetrate the cooked mackerel.
Put
the shallots, garlic, chilli, olive oil, lemon juice
and coriander into a small bowl and mix well.
Put
aside until ready to use to let the flavours blend.
To Cook the Mackerel
Make
3 to 4 deep slashes on each side of each fish.
Brush
each fish with a little oil and season both inside and out.
Barbecue over direct medium heat for 8 to 10 minutes,
turning once halfway through the cooking time.
To Serve
Place
the cooked fish on a warm platter, pour the dressing over the fish and allow to stand for a minimum of 5 minutes before serving so that
the fish can absorb the flavours of the dressing.
